Happy Friday! It’s been a crazy, busy week, so I’m looking forward to a relaxing weekend. If you haven’t already gathered, I’m addicted to eating and making Mexican food, and this enchilada recipe is definitely one of my favorites!

If I had known how easy it was to make teriyaki sauce from scratch, I would have made it a long time ago. Growing up, my family always used Kikkoman‘s Teriyaki Baste & Glaze sauce for fajitas. Don’t get me wrong, that sauce is delicious; however, this homemade teriyaki sauce tastes almost identical and is much healthier!
TGIAF aka thank God it’s almost Friday! This fresh, healthy and delicious Hawaiian shrimp bowl has been getting me through the week. The dish is super easy to make and full of flavor!
This decadent pork tenderloin sandwich is simple, with a gourmet twist. The crispy, breaded pork tenderloin is complimented by the sweet, apricot mustard spread. Everyone at the dinner table gave the sandwich two thumbs up!
I had the pleasure of working with Chocoley again (an online provider of high quality chocolate ingredients), who generously sent me some of its gourmet white chocolate and festive sprinkles to create a sweet Easter treat. I decided to make these ridiculously easy and delicious white chocolate bars, and I must warn you, they’re extremely addicting!!
I forgot how much I love chimichurri, until my boyfriend suggested I make it for dinner last weekend. This chimichurri is delectable and made even better atop juicy, grilled steak. Wrap everything up inside a grilled pita and it’s even more delicious (if that’s possible)!
Ever since my co-worker introduced me to chicken pad thai a few years ago, I’ve been hooked. There’s a restaurant across the street from our office that has some of the best pad thai I’ve ever tasted. I’d never made the dish before, so I decided to give it a shot. This recipe came pretty close to our local spot, and it was delicious!
These barbacoa tacos are a must-make. I think I ate the leftovers for a week straight. The tender and juicy meat paired ridiculously well with the crisp and sweet pickled red onions. This recipe makes enough for an army, so be prepared to have a ton of leftovers, or plan on serving the tacos at a dinner party!
So, there’s a chance I’m going to marry this fried chicken sandwich. It is the epitome of perfection, with its juicy and crispy chicken, spicy mayo, crunchy slaw and toasty, buttered bun. I made these sandwiches the other night for my boyfriend and good friend, and they both gave the sandwich two thumbs up. Luckily, there were leftovers, so I’ll be enjoying this for lunch today. :-)
