Carnitas are my absolute favorite. I order the meat at basically every Mexican restaurant, but when I want to make homemade carnitas, I don’t always have pork shoulder on hand (does anyone?). That’s where these chicken carnitas come in, as I almost always have chicken in the fridge or freezer. The meat is packed with flavor, super moist and perfectly crispy after a few minutes under the broiler. Add the chicken carnitas to tacos, a salad, a burrito bowl – you name it. SO delicious!
Over the years, I have become obsessed with Indian food – particularly chicken tikka masala, butter chicken, palak paneer, naan bread, you name it. I’ve been making this recipe from Bon Appetit for years and haven’t felt the need to create my own or find a new recipe because this one is just SO.GOOD. It’s beyond flavorful with just the right amount of spice. Serve alongside some buttery naan and you’re set!
For some reason, I don’t cook or eat Greek food very often and I’m not sure why, because I’m a big fan. From the fresh ingredients to the vibrant colors to the delicious sauces, you can’t go wrong. This Greek bowl is fairly simple to make and packed with flavor. I was too lazy to make pita bread to serve alongside the bowl, but it would of course be a fantastic addition!
Happy Friday! A few weeks ago, my husband and I visited my parents (socially distant, of course), and my mom whipped up this incredibly delicious recipe from Bon Appétit. Honestly, I still have dreams about this bowl. It was SO good with punches of flavor from every component in the dish, complimented by various textures. In two words – delicious and filling. Sign me up!
Now that awards season has wrapped, work has finally slowed down a bit and I’ve been able to get back in the kitchen to prepare some blog-worthy meals! This fried chicken sandwich was out.of.this.world delicious. Although time consuming to make (you will want to marinate the chicken up to 24 hours), I promise it will be worth it in the end!
Life got a bit crazy (busy with work, got engaged[!], etc.), which is why I’ve been absent from blogging, but I was able to get back in the kitchen to make this delicious chicken fried rice. The rice is full of flavor and the perfect meal to whip up during a hectic week.
After starting a new job with longer hours, I’ve found it difficult to find time in my schedule to cook. So, I have learned to appreciate quick, easy and delicious meals. This Mediterranean hummus wrap is just that and not lacking in the flavor department. The garlicy hummus pairs perfectly with the roasted vegetables and toasted pine nuts.
Fried.Chicken.Waffle.Sandwich. Are you in? I know I’m all in, especially considering bacon and ranch are involved. ;-)
