
With spring in full swing, there’s no better way to celebrate the season than with this delicious, vibrant and healthy salad. It’s packed with arugula, quinoa, asparagus, peas, bell pepper, toasted slivered almonds, pecorino romano…the list goes on! The salad is finished off with a simple lemon vinaigrette, and can be topped with grilled chicken or left as a vegetarian dish.

Over the past year, Asian cuisine has become one of my favorites. I can’t get enough of potstickers, dumplings, noodle dishes – you name it. Because of this newfound love, I was inspired to make homemade potstickers. These pork potstickers were incredibly delicious and relatively simple to make. The only somewhat difficult part was crimping the potstickers – primarily because I’m a perfectionist!

Lasagna is one of my favorite dishes to cook. Although the process is somewhat laborious, the dish is delicious and provides at least one week’s worth of leftovers! My fiancé and I ate this lasagna for dinner and brought the rest to work for lunch the remainder of the week. The ground turkey and vegetables provide a delicious alternative to the classically prepared lasagna with beef.

I’m always looking for new ground turkey recipes. The meat is much lighter than beef, but doesn’t lack in flavor. I made turkey burgers (here and here) and turkey chili (here), and wanted to cook something else with the meat.
I decided on ground turkey tacos picadillo; light with a kick of spice from the chili powder and cumin. The salty and crunchy homemade corn tortilla shells worked wonderfully with the succulent meat. Taking the extra time to fry the tortillas was well worth it. I’ll definitely be making these again for a quick, delicious meal.
