Is there anything better than tacos? If I were answering, I’d say no. Tacos – and Mexican food in general – are my absolute favorite. These pork tenderloin carnitas are incredibly flavorful with a kick from the chipotle peppers in adobo sauce, and don’t require a ton of toppings – a sprinkling of onions, cilantro, cotija cheese and lime juice will do the trick!

not your typical taco. [spiced lentil tacos w. adobo chile sour cream]

Lately, I’ve tried to make recipes using ingredients already on hand. I’ve had a huge bag of lentils sitting in my pantry for a few weeks, so I figured it was time to put them to use. I decided to make this simple and delicious recipe for spiced lentil tacos with an adobo chile sour cream.

Upon each bite, the palette is hit with the mild taste of the cumin soaked lentils, followed by the kick of the adobo chile sour cream. These tacos are perfect for weekday nights when cooking a gourmet meal isn’t in the cards.

Natalie, you can easily make the tacos vegetarian by using vegetable broth instead of chicken broth–I just didn’t have any in the pantry. :)

crunch time. [ground turkey tacos picadillo w. homemade taco shells]

I’m always looking for new ground turkey recipes. The meat is much lighter than beef, but doesn’t lack in flavor. I made turkey burgers (here and here) and turkey chili (here), and wanted to cook something else with the meat.

I decided on ground turkey tacos picadillo; light with a kick of spice from the chili powder and cumin. The salty and crunchy homemade corn tortilla shells worked wonderfully with the succulent meat. Taking the extra time to fry the tortillas was well worth it. I’ll definitely be making these again for a quick, delicious meal.
