I can’t seem to get enough of fresh corn this summer. It’s on sale almost every time I go to the grocery, so I continue to buy it and work it into our meals each week. This particular corn salad is one of my favorite dishes we’ve made. There’s minimal ingredients and prep work, but it’s bursting with fresh flavors and crisp textures. Highly recommend making it while corn is still in season!
Pan-searing scallops is a much simpler process than you might think — especially if you consider that the cook time for this recipe is only around five minutes. Perfectly golden on the outside and tender on the inside, the scallops’ mild flavor complements a savory butter wine sauce that’s mixed with fresh parsley and green onions.
Zoodles provide the perfect solution for a lighter “pasta” dish that is still full of flavor. The slightly al dente zucchini noodles, mixed with a thick and savory marinara sauce, is a scrumptious combination that will keep you coming back for more.
I absolutely love white fish, but for some reason, do not cook it very often. I made this panko-crusted halibut for my family the other weekend and it was a huge hit. The crispy and buttery fish is delicious atop the rich, white wine beurre blanc. Highly recommend!
The countdown to summer has officially begun, so it’s time to fire up the grill! Whip up some of this delicious eggplant–the flavor of the smokey, grilled vegetable pairs perfectly with the caprese salsa topping.
This crisp, savory and sweet coleslaw is a classic addition to your summer picnic in the park. Use it as a topping for a juicy pulled pork sandwich, or let it stand on its own alongside barbecued meat and grilled veggies.
If you’ve never made tomato sauce from fresh tomatoes, I highly suggest taking the extra step. Although I have nothing against canned tomatoes, there’s nothing like the flavor that fresh tomatoes provide. Pour this sauce atop spaghetti or chicken Parmesan, and you’ve got yourself a delicious meal!
These shrimp bites are incredibly delicious, impressive and beautiful. Talk about a triple threat!
Happy Monday, everyone! This pineapple rice is delicious, refreshing, and the perfect dish to say farewell to summer. I’m ready for ya, fall!
If you need something to cool yourself down on these miserably hot days, whip up some of this refreshing, freshly squeezed limeade. I guarantee it’ll do the trick!
