Over the years, I have become obsessed with Indian food – particularly chicken tikka masala, butter chicken, palak paneer, naan bread, you name it. I’ve been making this recipe from Bon Appetit for years and haven’t felt the need to create my own or find a new recipe because this one is just SO.GOOD. It’s beyond flavorful with just the right amount of spice. Serve alongside some buttery naan and you’re set!
With our wedding quickly approaching (February is going to be here before we know it!), we’ve begun ‘shredding for the wedding,’ as they say. We definitely still have our cheat days, but have been lightening it up during the week. This pesto brown rice bowl is inspired by one of my favorite dishes at Roni’s Diner in Beverly Hills. The bowl is incredibly delicious and I’m so glad I can now make my own version!
Life got a bit crazy (busy with work, got engaged[!], etc.), which is why I’ve been absent from blogging, but I was able to get back in the kitchen to make this delicious chicken fried rice. The rice is full of flavor and the perfect meal to whip up during a hectic week.
Considering the deliciousness and simplicity of this beef and broccoli recipe, there’s really no reason to spend the money on take out. This is the perfect dinner to whip up during a stressful week.

Although we had Monday off for the holiday, this week has already been insanely busy. This Korean beef is the perfect, simple (and of course, delicious) meal to prepare during a hectic week!
Words can’t describe how ecstatic I am that it’s Friday. Though this week consisted of long work hours and little sleep, it was all worth it for the success of our event yesterday. Everything ran smoothly with few glitches.
But, I have to say the most memorable part for me was meeting and talking with Justin Bieber (please don’t judge me)! He was genuinely kind, personable and a consummate professional.
This simple crock-pot chicken with wild rice was ideal to have on hand this week–hearty and delicious after a long day.

Right when I thought I avoided the nasty cold going around, I got hit with it yesterday. Nothing sounded better than a hot bowl of healthy and hearty soup, so I went home after work to make this homemade chicken and rice soup. I kept the recipe simple, aside from the homemade chicken broth (which I always keep stocked in the freezer). Since there’s minimal ingredients in the soup, the rich broth helps boost the flavor.
I’ve got cold medicine, Emergen-C and tissues close by my side, so I’m crossing my fingers I’ll fight this off soon. Here’s to hoping you won’t catch what I have!
