Soup season is officially here and I’ve decided I’m ok with it, as long as it’s soup like this chicken and white bean southwestern soup that I can garnish with ALL the toppings – cheese, sour cream, avocado, you name it. I’m sure you’ll be seeing more soup (and chili!) on here now that it’s finally starting to cool down in LA. But now that I say that, I’m sure it’ll be 90 degrees one day next week…

How cool is this deconstructed French onion soup?! The onions are packed with flavor and are so easy to make. My parents recently visited family in Ohio and during their trip, they had dinner at one of my aunt and uncle’s friend’s houses. Their friend made smoked and roasted Vidalia onions that everyone absolutely loved. Over Mother’s Day weekend, my mom and I decided to recreate the onions but instead, turn them into deconstructed French onion soup – because you really can’t go wrong when bread and cheese are involved. I gotta tell you, these onions were a game changer. Drop everything you’re doing and go make them!

YOU GUYS. I’ve gotta be honest, this is one of my favorite dishes I’ve made in a while – and that’s saying a lot coming from someone who doesn’t love soup! This white chicken chili is decadent, creamy, flavorful, the list goes on. It doesn’t hurt that there’s a brick of cream cheese in the recipe, but you definitely can’t skimp on that ingredient. Highly recommend making this ASAP!

Although I’m not a huge soup fan, I’ve got to say, this roasted bell pepper and tortellini soup was incredible. I was only able to try a very small bite, since I just had a major gum graft surgery, but my husband and mom both tried the soup and said it tasted as delicious as it smelled. Here’s hoping I’ll be healed up sooner rather than later so I can make this again and actually enjoy a bowl!

As much as I love Thai food, I rarely cook the cuisine – primarily because it can often be time consuming. This soup was far from that and came together in less than an hour. Happy New Year! Hope everyone had a great one. I’m just getting back into the swing of things, as I had two weeks off work. I spent most of the break at home with my family, then flew up to San Francisco for New Year’s Eve weekend.
Unfortunately, I caught that nasty cold going around, so I’m relying on comfort foods, Emergen-C and lots of rest to get better. Though I’m not fully recovered, this soup definitely helped a bit. Here’s to hoping none of you catch this cold!

Although this ham and bean soup recipe has been in my family for years, I’ve never made it before – I’ve always left that part up to my mom or grandma. While visiting home, my mom pulled a gorgeous honey baked ham out of the fridge. Almost immediately, I decided that I wanted to make use of the ham bone, and what better way to do that than make this extremely simple, yet hearty, healthy and delicious soup. I would even call it a stoop.
I’m always tricked into thinking this soup is unhealthy, because of its thickness and heartiness; however, there’s not one ingredient in this recipe that’s unhealthy – beans, ham carrots, onions.
Even though this isn’t the ideal summer dish, it’s made for the perfect meal this week with the start of California’s June gloom.
