How cool is this deconstructed French onion soup?! The onions are packed with flavor and are so easy to make. My parents recently visited family in Ohio and during their trip, they had dinner at one of my aunt and uncle’s friend’s houses. Their friend made smoked and roasted Vidalia onions that everyone absolutely loved. Over Mother’s Day weekend, my mom and I decided to recreate the onions but instead, turn them into deconstructed French onion soup – because you really can’t go wrong when bread and cheese are involved. At this point, I’m convinced there’s nothing the air fryer can’t do. I got the InstantPot air fryer lid this past Christmas and don’t think I realized how much I’d actually use the device. We’ve air fried everything from these incredibly delicious and simple onion rings to zucchini crisps to panko-parmesan crusted chicken to crispy chicken wings…the list goes on. These air fryer onion rings are the perfect game day food, appetizer or side dish. We gobbled them up in no time!

These barbacoa tacos are a must-make. I think I ate the leftovers for a week straight. The tender and juicy meat paired ridiculously well with the crisp and sweet pickled red onions. This recipe makes enough for an army, so be prepared to have a ton of leftovers, or plan on serving the tacos at a dinner party!

Though French onion soup isn’t your typical summer dish, I’ve never made the soup before, so I decided to give it a shot this weekend. I had to tweak the original recipe a bit, but otherwise, it turned out fantastic. The gooey cheese was definitely my favorite part. :)
