Although I’m not a huge soup fan, I’ve got to say, this roasted bell pepper and tortellini soup was incredible. I was only able to try a very small bite, since I just had a major gum graft surgery, but my husband and mom both tried the soup and said it tasted as delicious as it smelled. Here’s hoping I’ll be healed up sooner rather than later so I can make this again and actually enjoy a bowl!

To celebrate National Burger Day yesterday AKA my favorite day of the year, I decided to try my hand at the classic smash burger. Gathering inspiration from the delicious cheeseburger at Burgers Never Say Die in Los Angeles, this burger is classic and simple yet packed with flavor. The sharpness of the diced raw onion pairs perfectly with the ketchup, yellow mustard and vinegary pickles. If you are able to locate Martin’s Potato Rolls sandwich rolls, they really take this burger (and any burger/sandwich, really) over the top!
Now that I’ve made lasagna entirely from scratch, I can honestly say I never want to go back to store-bought noodles – which is somewhat unfortunate, because this recipe will take hours of your time. But if you enjoy cooking (and lasagna) as much as I do, it won’t matter because it is SO worth it in the end! The homemade noodles make all of the difference and take this lasagna to another planet. The ingredient list and instructions may appear a bit daunting, but please don’t let that deter you from making this delicious dish!
Growing up, one of my favorite things to order when out to dinner with my family was Irish nachos. Although traditional Irish nachos are made with sliced potatoes, I have always preferred the versions made with french fries. I was inspired to recreate this delicious dish over the weekend to accompany a day full of football. Since I was just making this dish for myself and my husband, the portion size is for approximately two people, but go ahead and double or triple the ‘recipe’ (it’s not much of a recipe!) if you are entertaining more guests.
Gluten-free, vegetarian, low cal, vegan…this dish is none of those things. Whoops! But I swear to you it’s ridiculously delicious. The casserole is hearty (as you can see), so a small piece will satisfy your hunger. Whip this up for your friends and family over the weekend and maybe serve it with a fruit platter or something.
