I’ve been on a big berry kick this summer…I just can’t get enough! I had some homemade lemon curd in the freezer from my mom that I’d been meaning to use, which is why this extremely easy dessert came to life. It’s layered with lemon curd, lemon mousse and homemade whipped ream (which I over-whipped and the perfectionist in me is cringing), then topped with fresh berries. So, so easy and delicious!

For some reason, I don’t cook or eat Greek food very often and I’m not sure why, because I’m a big fan. From the fresh ingredients to the vibrant colors to the delicious sauces, you can’t go wrong. This Greek bowl is fairly simple to make and packed with flavor. I was too lazy to make pita bread to serve alongside the bowl, but it would of course be a fantastic addition!

With wedding season in full swing, I haven’t been able to spend as much time in the kitchen. My family and I flew to our hometown, Columbus, Ohio, last weekend to celebrate my oldest brother’s wedding. The ceremony and venue were absolutely beautiful, and it was wonderful to see family I hadn’t seen in years. The only downside of the trip was that we ate pretty unhealthy. So, now that I’m back home, I’m trying to get back on track. We’ll see how long that lasts, ha!

I love lemon–especially when used in desserts. I was craving a lemon treat the other night, so I decided to make these lemon sugar cookies. The texture of the cookie was perfect–slightly crunchy on the outside and chewy on the inside. Of course the cookies were unbelievably addicting, so I shared them with friends and co-workers. That way, I didn’t eat the entire batch!

Life has been insanely busy since the start of the year, meaning I’ve been a complete stress case. On top of working full-time and taking an extension course at UCLA, I’m moving into a new apartment in two weeks! Up until now, I’ve been too scared to make risotto (silly, I know). I assumed my attempt would result in a mushy disaster, even though I’ve watched my mom cook the rice over a dozen times.
But good news, it turned out just right! The risotto was al dente, creamy and full of flavor, with a slight tang from the lemon zest. I made enough to feed me for an entire week, so whoever wants to come over for dinner, please do!
