For some reason, I don’t cook or eat Greek food very often and I’m not sure why, because I’m a big fan. From the fresh ingredients to the vibrant colors to the delicious sauces, you can’t go wrong. This Greek bowl is fairly simple to make and packed with flavor. I was too lazy to make pita bread to serve alongside the bowl, but it would of course be a fantastic addition!

With wedding season in full swing, I haven’t been able to spend as much time in the kitchen. My family and I flew to our hometown, Columbus, Ohio, last weekend to celebrate my oldest brother’s wedding. The ceremony and venue were absolutely beautiful, and it was wonderful to see family I hadn’t seen in years. The only downside of the trip was that we ate pretty unhealthy. So, now that I’m back home, I’m trying to get back on track. We’ll see how long that lasts, ha!

Happy Thursday! I came across this recipe for Parmesan and spinach orzo on Chung-Ah’s blog over at Damn Delicious, and knew I had to make it. The creamy pasta was full of flavor and the perfect side dish. Luckily, the recipe made a lot of leftovers, so I was able to bring the orzo for lunch all week. :)

I’ve been fighting a cold all week, so I’m just now posting the dinner I made my mom and family for Mother’s Day. My mom requested I make this dish, as she made it for a dinner party and said it was an absolute hit; and boy, was she right. Not a drop of food was left in anyone’s bowl.
The “crazy” water was delicious, but the halibut stole the show. The slightly crunchy parmesan, pesto and panko crust perfectly juxtaposed the flaky fish. I will most definitely make this again soon.
(FYI, I made this meal for five people, so I tripled the recipe below).

This orzo salad just screams summer, right? I brought the dish to my friend’s birthday party this past weekend at Malibu Wines, and it was a hit. We ate the pasta alongside a fresh spinach salad with chicken, strawberries, walnuts, pine nuts and a poppy-seed dressing, and of course washed it down with a chilled glass of rosé–we were at a winery, after all.
