For some reason, I’d never made zucchini boats until now. Not sure why, considering they were unbelievably easy to make…and delicious! After perusing the Internet for recipe ideas, I decided to just make up my own, with ingredients already on hand. The zucchini boats were fantastic served alone, but would also be wonderful alongside grilled chicken breast.
On a side note, I’m bummed that my Buckeyes didn’t make it to the Final Four, but they had a great season. I actually got to see them play in the Sweet Sixteen and Elite Eight at Staples Center, which was pretty unreal. Go Bucks!

Even though we had a long weekend, this week is going by miserably slow. At least work is busy, so that helps!
I remember Giada making these stuffed peppers in an episode of Giada at Home a while back, and I’ve had the recipe bookmarked ever since. I altered the recipe a bit, using goat cheese instead of ricotta, excluding the peas, etc., and boy were they delicious–especially straight out of the oven. My roommate doesn’t eat pork, so I excluded the pancetta from her peppers. Judging from her reaction, the peppers were equally as delicious without the meat. :)

It’s already Wednesday? This week is flying by for me. Of course, now that I say that, the rest of the week is going to go by painfully slow. Let’s hope not though, because I can’t wait to go home this weekend to see my cousins from Ohio–it’s been far too long!
I was home last weekend as well, so my mom and I made these unbelievably flavorful stuffed peppers served atop a couscous blend. I’ve eaten this for lunch the past three days, and wish I had enough for the rest of the week. Though the recipe was time-consuming, the hours spent were definitely worth it. Delicious, healthy, colorful–can’t go wrong. :)

I was recently approached by Swanson Health Products to write a review on some of the company’s products, which range from oils to spices to supplements. Swanson sells high-quality, reasonably priced and primarily organic products.
I reviewed BIJA Organic Extra-Virgin Olive Oil, Swanson EFAs 100% Natural Macadamia Nut Oil and Swanson Organic Poultry Spice Blend (Swanson sent the products free of charge).
We celebrated my roommate’s sister’s birthday over the weekend with appetizers, drinks and dinner at our apartment. The menu: this bell pepper and onion crostini with pesto, caprese salad with heirloom tomatoes, orzo salad with garbanzo beans, tri-tip, apple and gouda chicken sausage and peanut butter blondies for dessert.
I used the BIJA Organic Extra-Virgin Olive Oil for the crostini, and was pleasantly surprised by its depth of flavor. The oil is rich and smooth, with a beautiful dark green hue. (I’ll feature the macadamia nut oil and poultry spice blend in a separate post).
The crostini was a hit and not a crumb was left on the plate. I will definitely make these again soon.
