Enchiladas have always been my go-to meal. When I’m not sure what to make for dinner and I’m craving Mexican food (which is pretty much 99% of the time), I make enchiladas. These creamy salsa verde chicken enchiladas were some of the best I’ve made in a while. They were even more special because they were made with a jar of Tejano Salsa Verde my brother shipped from his hometown of Dallas, Texas – and apparently you can only buy the salsa in Texas (but I guess there’s always Amazon). The enchiladas can of course be made with any jar of spicy salsa verde, though, so you really can’t go wrong!

This chicken enchilada casserole is to die for. The dish won’t be on your diet plan, but it’s worth using a cheat day on its ooey-gooey, cheesy deliciousness. I will absolutely be making this again!

I’m finally back in the kitchen! Although I’m still healing from my gum procedure last week, I’m thankfully able to eat soft, solid foods. Of course, I missed eating Mexican food, so I made these deliciously cheesy enchiladas. This recipe is very similar to these enchiladas, but I switched it up a bit and added corn, beans and avocado. Yum!

I apologize to anyone who doesn’t love Mexican food as much as I do, because I can’t stop cooking it lately! When I’m at the grocery store, I always find myself buying cilantro, jalapeños, tortillas, etc., and naturally, my mind goes to Mexican food.
Anyways, these enchiladas were delicious! I typically prefer a tomatillo sauce, but this red sauce was fantastic and I know I’ll be making it again soon.

I hope everyone has recovered from St. Patrick’s Day! My roommate and I celebrated the holiday with Netflix and a homemade green beer–my kind of night. :)
I made these green chile-chicken enchiladas last week and can’t stop thinking about them. The enchiladas were unbelievably flavorful and boy, were they spicy (not complaining, though). I will be making them again soon!
