I can’t believe Christmas is only a few days away. Fortunately, I only have to buy one more present, and already wrapped all of my other gifts–that’s a first for me! Considering the past few months have been extremely busy, I’m really looking forward to relaxing at home with family for the next couple weeks. :-)
I’m finally back in the kitchen! Although I’m still healing from my gum procedure last week, I’m thankfully able to eat soft, solid foods. Of course, I missed eating Mexican food, so I made these deliciously cheesy enchiladas. This recipe is very similar to these enchiladas, but I switched it up a bit and added corn, beans and avocado. Yum!
Whoa, two posts in one week? Can’t remember the last time I did that. This week was a little less crazy with work and whatnot, so I took advantage and got to cooking.
After seeing a photo of these veggie burgers online the other day, I had to make them. I’m so glad that I did because they were absolutely delicious, and I will definitely be making them again soon.
Not having work on Monday really threw me off this week–I can’t believe it’s already Wednesday. I did, however, enjoy the long weekend and spent part of it at home with my grandma. We had a wonderful time together hanging out, shopping and eating (this quinoa salad included)…oh, and dealing with my flat tire for most of Saturday afternoon. I got to experience my first ride in a tow truck, though. Woohoo!
It’s back to reality for me, after an amazing, yet exhausting weekend in the desert at Coachella. I got to see some of my favorite bands/artists perform for the first time–Radiohead, Bon Iver, Miike Snow, The Shins, etc. I’m already looking forward to next year.
Though I’m still catching up on sleep and work, the weekend was completely worth it. One thing is for sure–it’s time to get back to healthier eating, so this quinoa salad should do the trick.

Hope everyone had a relaxing President’s Day! I had the holiday off, so I spent the day at home doing absolutely nothing–I wouldn’t have wanted it any other way. After hosting the lamb supper club last week, a cooking-free weekend sounded quite appealing. But, since this crock-pot recipe is so simple, I didn’t mind whipping it up.
I have a couple of people to thank, so I’ll make this quick. In need of a healthy and hearty side dish? Filler for a burrito? Topping for crostini? Dip for chips? Look no more my friends. I leave you in good hands with this recipe.
