With our wedding quickly approaching (February is going to be here before we know it!), we’ve begun ‘shredding for the wedding,’ as they say. We definitely still have our cheat days, but have been lightening it up during the week. This pesto brown rice bowl is inspired by one of my favorite dishes at Roni’s Diner in Beverly Hills. The bowl is incredibly delicious and I’m so glad I can now make my own version!

it’s been a minute. [cheeseburger tater tot cups]

Hi everyone! It’s been a minute (or a couple months) since I last posted. With a busy work schedule and back-to-back weekends of weddings, bridal showers, bachelorettes – you name it – I haven’t found much time to get in the kitchen! We finally had a weekend at home with absolutely no plans, so we decided to make these incredibly delicious cheeseburger tater tot cups. I found these gems on Pinterest and made a few tweaks to the recipe and boy, were they a hit. These tots are the perfect appetizer for football Saturday and/or Sunday!

wingin’ it. [creamy potato salad]

Some of my favorite days are spent in the kitchen cooking with my mom. Last year, we were preparing for a summer picnic and tasked with making a potato salad to accompany the rest of the BBQ food. After scouring the Internet for recipes, we finally decided to wing it and make up our own. This recipe is the result of that and it’s been a staple in our family ever since. I recently brought this potato salad to a 4th of July BBQ where it was a hit. Luckily, I made way too much, so we had tons of leftovers!

steamy. [pork & vegetable potstickers]

Over the past year, Asian cuisine has become one of my favorites. I can’t get enough of potstickers, dumplings, noodle dishes – you name it. Because of this newfound love, I was inspired to make homemade potstickers. These pork potstickers were incredibly delicious and relatively simple to make. The only somewhat difficult part was crimping the potstickers – primarily because I’m a perfectionist!

pasta la vista, baby. [turkey & vegetable lasagna]

Lasagna is one of my favorite dishes to cook. Although the process is somewhat laborious, the dish is delicious and provides at least one week’s worth of leftovers! My fiancé and I ate this lasagna for dinner and brought the rest to work for lunch the remainder of the week. The ground turkey and vegetables provide a delicious alternative to the classically prepared lasagna with beef.
