If you like fruit and cheese or if you like a sweet and savory combo, this one’s for you! The first bite was delicious and all, but when I got to the bite with the mint…mind blown! I honestly wouldn’t even consider myself a huge mint fan, but it worked perfectly with all the flavors on this crostini. These would make for a delicious and beautiful appetizer at any dinner party!

let’s get grillin’. [balsamic-marinated grilled artichokes]

Grilling season officially kicks off this weekend, which means these balsamic-marinated grilled artichokes should definitely be on the menu. I’m at a loss for words trying to explain how delicious these artichokes are, so you’ll just have to try them yourself. :) I highly recommend squeezing some charred lemon on top and dipping the leaves into pesto aioli – a winning combo!

spring salad. [quinoa, arugula, asparagus & pea salad]

With spring in full swing, there’s no better way to celebrate the season than with this delicious, vibrant and healthy salad. It’s packed with arugula, quinoa, asparagus, peas, bell pepper, toasted slivered almonds, pecorino romano…the list goes on! The salad is finished off with a simple lemon vinaigrette, and can be topped with grilled chicken or left as a vegetarian dish.

beginner’s luck. [persian-ish rice with tahdig]

Ever since watching Samin Nosrat’s Salt, Fat, Acid, Heat on Netflix a few years ago, I’ve wanted to make her Persian-ish rice with tahdig. Although simple ingredient-wise, the process is somewhat intimidating. I decided to give Samin’s recipe a try over the weekend with my mom while visiting home and to our surprise, the rice turned out incredibly fluffy and flavorful, with a perfectly golden and crispy crust. Guess we’ll just call it beginner’s luck?!

here’s hoping. [roasted bell pepper & tortellini soup]

Although I’m not a huge soup fan, I’ve got to say, this roasted bell pepper and tortellini soup was incredible. I was only able to try a very small bite, since I just had a major gum graft surgery, but my husband and mom both tried the soup and said it tasted as delicious as it smelled. Here’s hoping I’ll be healed up sooner rather than later so I can make this again and actually enjoy a bowl!

With our wedding quickly approaching (February is going to be here before we know it!), we’ve begun ‘shredding for the wedding,’ as they say. We definitely still have our cheat days, but have been lightening it up during the week. This pesto brown rice bowl is inspired by one of my favorite dishes at Roni’s Diner in Beverly Hills. The bowl is incredibly delicious and I’m so glad I can now make my own version!

wingin’ it. [creamy potato salad]

Some of my favorite days are spent in the kitchen cooking with my mom. Last year, we were preparing for a summer picnic and tasked with making a potato salad to accompany the rest of the BBQ food. After scouring the Internet for recipes, we finally decided to wing it and make up our own. This recipe is the result of that and it’s been a staple in our family ever since. I recently brought this potato salad to a 4th of July BBQ where it was a hit. Luckily, I made way too much, so we had tons of leftovers!
