I can’t get enough of the summer tomatoes! And as good as they are, they just make me miss the tomatoes we ate in Italy during our honeymoon a few years ago because those tomatoes were next level. I lost count of how many caprese salads we ate. Anyways, these tomato tarts with flaky puff pastry were SO easy to whip up and full of flavor. I made a few changes, but used Cuisine at Home’s recipe for the most part. These would be great for a gathering with friends and family!

a real winner. [chewy chocolate & peanut butter cookies]

If you know me well, you know I’m oddly not a chocolate fan (which is why I don’t have many chocolate recipes on my blog – sorry!). But for the sake of everyone else who is a chocolate fan, I figure I need to show some love once in a while. That’s where these chewy chocolate and peanut butter cookies come in. This recipe honestly just came from the Reese’s peanut butter chips bag, but it was a real winner. My husband, mom and dad can attest to that!

gettin’ figgy with it. [fig, prosciutto & whipped ricotta crostini]

In my opinion, you can’t go wrong with crostini – mainly because bread and cheese are typically involved. This crostini is not only easy on the eyes, but it’s delicious, as well. The creamy ricotta paired with the buttery prosciutto and crispy garlic bread is a winning combo. This would make for a great appetizer or in my case, a delicious lunch. I couldn’t let these go to waste after photographing them!

berry kick. [lemon mousse with fresh berries]

I’ve been on a big berry kick this summer…I just can’t get enough! I had some homemade lemon curd in the freezer from my mom that I’d been meaning to use, which is why this extremely easy dessert came to life. It’s layered with lemon curd, lemon mousse and homemade whipped ream (which I over-whipped and the perfectionist in me is cringing), then topped with fresh berries. So, so easy and delicious!

sweet & savory. [smashed blackberry & whipped goat cheese crostini]

If you like fruit and cheese or if you like a sweet and savory combo, this one’s for you! The first bite was delicious and all, but when I got to the bite with the mint…mind blown! I honestly wouldn’t even consider myself a huge mint fan, but it worked perfectly with all the flavors on this crostini. These would make for a delicious and beautiful appetizer at any dinner party!

I don’t know what it is, but I’ve been on a cocktail kick lately (I’m typically more of a wine gal). It’s most likely because it’s been sweltering hot and there’s nothing a refreshing cocktail can’t fix. This margarita definitely hit the spot the other night and was the perfect combination of sweet and spicy. These would be a great addition to your Taco Tuesday!

cool down. [raspberry vodka spritzer with mint]

Kick your summer up a notch with this easy peasy, super refreshing cocktail. It’s the fresh muddled raspberries that do it for me. And raspberries are fruit, so this is healthy…right? It’s been miserably hot the past couple weeks, so I haven’t been using the oven and stove as much, which is why this spritzer became a thing. The cocktail certainly helped cool us down!
