hit the spot. [lemon, asparagus & bacon pasta]

I was stumped on what to make for dinner the other night, but knowing I had leftover asparagus in the fridge that needed to be used, I at least had a starting point. Since we also had frozen bacon, dried pasta and citrus, I decided to toss everything together and turn it into a delicious pasta. The dish was light, flavorful and definitely hit the spot. Pretty sure it has become a new favorite in our house!

Stumped on side dishes for Thanksgiving? I’ve got you covered! This fall salad is one of my all-time favorites. It has everything you need and more – it’s savory and sweet, with ALL the delicious goodies. My family brings this salad to Thanksgiving every year and it’s always a crowd pleaser. The dressing is really the pièce de résistance in this recipe!

non-traditional. [irish nachos]

Growing up, one of my favorite things to order when out to dinner with my family was Irish nachos. Although traditional Irish nachos are made with sliced potatoes, I have always preferred the versions made with french fries. I was inspired to recreate this delicious dish over the weekend to accompany a day full of football. Since I was just making this dish for myself and my husband, the portion size is for approximately two people, but go ahead and double or triple the ‘recipe’ (it’s not much of a recipe!) if you are entertaining more guests.

crowd-pleaser. [bacon jalapeño popper dip]

Wow, it’s been a minute since I’ve posted! With work getting busier by the minute, I haven’t had as much time to document all of my recipes, but I am trying to get back on track. I made this jalapeño popper dip over Christmas break and it was to.die.for. It was an absolute hit with friends and family and you can bet I will be making it again soon!

labor of love. [buttermilk-baked chicken sandwich w. apple, onion & bacon slaw, fried green tomato, green goddess dressing & cheddar]

Soooo, this chicken sandwich took me three hours to make, but it was completely worth it–I swear! The sandwich and all of its components were delicious. I just hope you’re not afraid of getting a little messy, because you’re bound to end up with slaw on your hands and dressing on your face!
