In my opinion, jalapeño poppers are one of the most delicious (and easiest) appetizers – particularly on game day. These maple sausage and cream cheese poppers come together in less than 30 minutes and are always a crowd pleaser. This recipe is just for two people (hello, quarantine), so I’d recommend doubling or tripling the recipe if you’re serving a small group. These would be perfect for Super Bowl Sunday!

For some reason, I don’t cook or eat Greek food very often and I’m not sure why, because I’m a big fan. From the fresh ingredients to the vibrant colors to the delicious sauces, you can’t go wrong. This Greek bowl is fairly simple to make and packed with flavor. I was too lazy to make pita bread to serve alongside the bowl, but it would of course be a fantastic addition!

can’t get better than this. [white chicken chili]

YOU GUYS. I’ve gotta be honest, this is one of my favorite dishes I’ve made in a while – and that’s saying a lot coming from someone who doesn’t love soup! This white chicken chili is decadent, creamy, flavorful, the list goes on. It doesn’t hurt that there’s a brick of cream cheese in the recipe, but you definitely can’t skimp on that ingredient. Highly recommend making this ASAP!

I’ve been using my Instant Pot a lot more lately, but never thought to use it for beef brisket until now – and holy moly, am I glad I did. The beef was insanely flavorful, juicy, fall apart tender, and only took about an hour and a half to cook. Is there anything better than tacos? If I were answering, I’d say no. Tacos – and Mexican food in general – are my absolute favorite. These pork tenderloin carnitas are incredibly flavorful with a kick from the chipotle peppers in adobo sauce, and don’t require a ton of toppings – a sprinkling of onions, cilantro, cotija cheese and lime juice will do the trick!

I’m still in shock Christmas is this week. Where has the time gone?! One thing I absolutely recommend making before the holiday weekend is this homemade English toffee. My mom has been making this recipe for years and it’s everything you’d want in a toffee – it’s sweet, it’s crunchy and it’s decadent. Although a laborious task, making the toffee is a fun group activity and so worth the time and effort in the end. It makes for a great gift, too!

here’s hoping. [roasted bell pepper & tortellini soup]

Although I’m not a huge soup fan, I’ve got to say, this roasted bell pepper and tortellini soup was incredible. I was only able to try a very small bite, since I just had a major gum graft surgery, but my husband and mom both tried the soup and said it tasted as delicious as it smelled. Here’s hoping I’ll be healed up sooner rather than later so I can make this again and actually enjoy a bowl!

Is there anything more comforting and delicious than lasagna? Better yet, homemade lasagna? This recipe is made completely from scratch (well, almost) and is worth every hour it takes to make. The dish is layered with homemade noodles, followed by a 3-hour ragu, a spinach and ricotta mixture, and shredded mozzarella cheese. I’m drooling just trying to explain it – SO good!
