I’ve finally mastered homemade mac and cheese (bold statement, I know). Though I’m a sucker for Kraft blue box, it can’t touch the pasta made from scratch. I kept this recipe relatively simple, only adding crispy prosciutto and fresh parsley. But if you’re looking for something more gourmet, give this recipe a try–four-cheese, white truffle oil and mushroom mac and cheese. Yes, it’s as decadent and rich as it sounds.

Friday? Is that you? Is that really you? Thank heavens. Lately, I haven’t had time to cook anything very gourmet, so I’ve relied on quick, simple and healthy recipes. I was able to whip up this chicken with honey-beer sauce after work and still eat at a reasonable hour. My kind of meal. :)

I haven’t had much time to cook this week; however, I did get a chance to whip up these simple jalapeno chicken wraps last Sunday. A group of friends and I decided to picnic before the Passion Pit and Hot Chip concert at the Hollywood Bowl, so everyone was in charge of bringing food or wine. We had an absolute blast and stuffed ourselves with mass amounts of food, from these wraps to my orzo salad to fresh fruit to The Alcove‘s lemon bars and peanut butter cookies. Happy weekend, everyone!
Hey, they liked them!

Hope everyone is having a great Saturday. Whether or not you’re a vegetarian, this “burger” is definitely worth making. It’s flavorful and complex–the bite of the Dijon mayonnaise compliments the earthy tasting patty, while the slightly crispy bun perfectly contrasts the creamy goat cheese and tender patty. It’s a healthy alternative to a hamburger with fewer calories. :)

Lately, I’ve seen multiple ‘canning’ posts floating around the blogosphere, which made me realize that I’d never canned anything before. My mom and I decided to give it a go, and canned pickles and peach jam. What a combo, right? Both turned out delicious–separately, of course.
Since I won’t post until next week, I hope everyone has a fun and safe Labor Day weekend. I leave for San Francisco tomorrow night–can’t wait!

Happy hump day! Hope everyone is having a wonderful week so far. Per usual, it’s been pretty hectic over here, but I’ve got to say, these tequila-lime mahi mahi tacos made everything much better.
Though the marinade didn’t flavor the fish as much as I’d hoped, the honey-lime sour cream and vinegar-soaked cabbage brought the tacos to life. Serve alongside an ice cold beer and you’ve got yourself the perfect summer meal.

It’s hot. I mean, really hot. So why did I make pasta? I suppose I’d have to go with laziness; I didn’t want to make a trip to the grocery, so i played the game of ‘use what you have.’ The dish turned out delicious, and not too heavy. My roommate, Megan, and I enjoyed a bowl of the pasta while blasting the air conditioning. It made the dining experience much more enjoyable. :)

Last weekend and this week have been pretty busy, from helping my new roommate, Megan, move into my apartment to work piling up at the office. I did, however, find time on Sunday to make a quick trip to Trader Joe’s and to whip up this pasta salad. Since it continues to warm up here in LA, I figured this cold pasta would be perfect for lunch.
Megan and I are devoting the rest of the week to furnishing and decorating the apartment. Last night, we painted our table and chairs white, while sipping on wine and listening to the Hall & Oates Pandora station. It was pretty ideal. :)

Put your bikini/swim trunks away for the day and go make this sandwich. I promise you won’t regret it. Though this isn’t a healthy summer recipe, the sandwich is so delicious that it doesn’t matter. And as I’m sure you can see from the photo, the gooey cheese takes the cake.
One of the best parts about this sandwich is that it’s made up of leftovers. Sure, not everyone has leftover beef tenderloin and homemade pesto sitting in the fridge, but if you do (or want to make everything fresh), I highly suggest you do so. :)

This orzo salad just screams summer, right? I brought the dish to my friend’s birthday party this past weekend at Malibu Wines, and it was a hit. We ate the pasta alongside a fresh spinach salad with chicken, strawberries, walnuts, pine nuts and a poppy-seed dressing, and of course washed it down with a chilled glass of rosé–we were at a winery, after all. Hope everyone has a wonderful weekend!
