I couldn’t help but notice the pimento cheese recipes floating around the Internet, so I wanted to try it myself. Of course, being a burger lover, I decided to use the cheese on a juicy burger. The pimento cheese is delicious plain, as a dip with chips, but the melted, gooey cheese was divine on a burger!

I know I’m late to post this festive Fourth of July cocktail, but the drink would be delicious any time of the year! The strawberry and blueberry ice cubes bring an otherwise boring and colorless drink to life. If you’re not a strawberry or blueberry fan, you can of course replace them with raspberries, blackberries, grapes, etc.

CHEESE! I don’t think I could live without it. I’ve considered cutting out dairy products, but the thought of life without cheese makes me cringe. This queso dip was the epitome of cheesy deliciousness with just the right amount of spice from the serrano. The dip would be perfect for your Fourth of July party tomorrow!

This past weekend revolved around food–particularly yesterday. On top of making these delicious and unique tostadas, I made spicy queso dip (with my new cast iron skillet!), and jalapeño margaritas. I’ll post both recipes soon. Back to the tostadas, though. The tostadas were beyond flavorful and spicy! I have a relatively low spice tolerance, so I added extra sour cream to calm the burn. :)

I wasn’t sure what to make for dinner the other night, but knew I wanted something with buffalo chicken. I spotted the zucchini at the grocery store and was inspired to make these zucchini boats, which were everything I dreamed of and more. My brother suggested using potato skins instead of zucchini next time (which I’m all about), so keep your eyes peeled for that post! :)

This pasta dish is a new favorite. Jalapeno, lime and cilantro…you can’t go wrong! The flavor was incredible, and similar to that of CPK’s chicken tequila fettuccine–but better, of course, considering it’s homemade!

Happy Friday!! I hope everyone has a wonderful weekend filled with friends, family and lots of food (like these delicious shredded beef tacos). Pop open a cold beer with the tacos and you’ve got yourself the perfect meal–well, at least in my eyes!

Cinnamon and sugar anything = my weakness. Remember these churro cupcakes? I could eat 10. The combo is just too delicious!
Snickerdoodles are one of my favorite cookies, but for some reason, I’ve never posted them on my blog. These cookies have the perfect texture–chewy on the inside with a slight crunch on the outside, topped with gobs of cinnamon and sugar amazingness.

I’m extremely frugal, so in my eyes, wasting food is criminal. I always try to cook with ingredients already on hand, and this grilled cheese is a result of that. Using leftovers and items I needed to get rid of, I whipped up this cheesy and delectable grilled cheese. The caramelized onions stole the show, but the truffled fried potatoes came in a strong second. Of course, the gooey Gruyere cheese played its part, too!

I’ve become a tough critic when it comes to banana bread, but this recipe had me dancing on the ceiling. The bread is by far one of the best I’ve ever tasted–I can’t stop thinking and talking about it. Although more time-consuming than most banana bread recipes, it is way worth the effort. I could and would have eaten the entire loaf myself, but I figured it best to share!
