Hey, I made something with chocolate! This is a big step for me because well, I’m that weirdo who doesn’t like chocolate. Anyways, I made these cupcakes for my boss’ Christmas party and they were a huge hit. My co-worker said they tasted like peppermint bark in cupcake form.

VeeV Spirits contacted me a couple months ago asking if I’d be interested in creating a dish to pair with one of their seasonal cocktails. Both the cocktail and eggplant stacks are making an appearance at our Thanksgiving dinner tomorrow!

VeeV is featuring my recipe on their Facebook page today…check it out here!

Though the casserole is by no means a healthy dish, it’s unbelievably delicious and comforting. It’ll taste even better once it starts to cool down in LA. Hurry up, fall weather!
