When I’ve had a really long work day, there’s nothing I want more than a quick, easy and delicious dinner. And if carbs are involved, that’s a bonus. This creamy sun-dried tomato pasta his all the marks and makes enough for a whole family. Even though I was only cooking this dish for me and my husband, I wasn’t complaining because I was able to devour the leftovers for a couple days. :-)

IMHO. [creamy calabrian chili bolognese]

In my humble opinion (IMHO), there’s nothing better than a big, comforting bowl of pasta. If you’re feeling down or just really, really hungry, it’s sure to cheer you up and fill you up. This creamy Calabrian chili bolognese is one of my favorite pastas I’ve made in a while. It’s full of flavor with just the right amount of heat from the Calabrian chilis. Although I made way too much for two people, let’s be honest, it was gone in just a couple days.

it’s poppin’. [jalapeño poppers w. maple sausage & cream cheese]

In my opinion, jalapeño poppers are one of the most delicious (and easiest) appetizers – particularly on game day. These maple sausage and cream cheese poppers come together in less than 30 minutes and are always a crowd pleaser. This recipe is just for two people (hello, quarantine), so I’d recommend doubling or tripling the recipe if you’re serving a small group. These would be perfect for Super Bowl Sunday!

late to the game. [jalapeño poppers w. sausage & parmesan]

I’m a little late, but I hope everyone’s Super Bowl Sunday was a blast (aside from the 49ers losing). My roommate and I had a bunch of friends over to  watch the game, eat mass amounts of food and drink an exorbitant amount of beer. We had a variety of appetizers ranging from these stuffed jalapenos to a crock-pot sausage and cheese dip to mini weenies in Jack Daniels sauce to homemade chicken tenders to a kale cheese dip. Since a couple of my friends are vegetarians, I made half of the jalapenos with sausage, and half with just the cheese mixture–both were equally delicious!
