It’s been a big week for me, guys. I baked something with chocolate and I made a Chinese dish. Woohoo! This orange chicken was incredibly delicious, but frying the chicken was messy and time consuming. I guess I need to ask Santa for a deep fryer. ;)

Hey, I made something with chocolate! This is a big step for me because well, I’m that weirdo who doesn’t like chocolate. Anyways, I made these cupcakes for my boss’ Christmas party and they were a huge hit. My co-worker said they tasted like peppermint bark in cupcake form.
These little guys are perfect to bring to any upcoming holiday party. :)

VeeV Spirits contacted me a couple months ago asking if I’d be interested in creating a dish to pair with one of their seasonal cocktails. I gladly accepted the offer, and chose to work with the VeeV Fruit Cup Sangria. The cocktail was sweet and delicious, and paired wonderfully with my slightly spicy grilled eggplant stacks. Both the cocktail and eggplant stacks are making an appearance at our Thanksgiving dinner tomorrow!

Mac and cheese can do no wrong…especially when bacon is involved. I think we can all agree on that. The subtle kick of the jalapeno and the saltiness of the bacon in this dish provide a nice balance of flavors. Over the past few months, I’ve fallen in love with buffalo sauce. Don’t ask what took me so long. I had a ton of quinoa in my pantry and wanted to find a way to combine the grain with my newfound love (buffalo sauce). To my surprise, I found a recipe online that did just that. This quinoa bake was divine–I’m getting giddy just thinking about having it for dinner tonight. :)

Have I mentioned how much I love pumpkin? Yeah, probably. I love it even more when paired with cream cheese frosting. So, these whoopie pies are right up my alley. The cakes are fluffy and full of flavor, with a slight kick from the bourbon in the filling. Bring these pies to a fall dinner party or Thanksgiving dinner and they’re sure to be a hit.

Chicken divan will always remind me of home. My mom made it for my family often growing up, and it’s one of my favorite home-cooked meals.
