With spring in full swing, there’s no better way to celebrate the season than with this delicious, vibrant and healthy salad. It’s packed with arugula, quinoa, asparagus, peas, bell pepper, toasted slivered almonds, pecorino romano…the list goes on! The salad is finished off with a simple lemon vinaigrette, and can be topped with grilled chicken or left as a vegetarian dish.

Stumped on side dishes for Thanksgiving? I’ve got you covered! This fall salad is one of my all-time favorites. It has everything you need and more – it’s savory and sweet, with ALL the delicious goodies. My family brings this salad to Thanksgiving every year and it’s always a crowd pleaser. The dressing is really the pièce de résistance in this recipe!

refreshing. [couscous salad w. chicken, vegetables & basil dressing]

I’m taking a short break from hearty fall recipes to feature this refreshing and healthy couscous salad. I know I often rave about recipes being the ideal appetizer/side dish/main course to serve dinner guests, but I’m pretty sure this one trumps all.

The salad is fresh and full of flavor. It can easily be made vegetarian by omitting the chicken and cheese, and making a basil vinaigrette, instead of a mayo-based dressing. The basil dressing is one of my favorite components; however, I use it sparingly, as it defeats the healthy aspect of the dish. :)
