Scalloped potatoes and ham always reminds me of my grandma. Although she doesn’t make it anymore, my mom and I made sure to learn the recipe; however, we adapted it by using Jarlsberg and gouda cheese, instead of my grandma’s favorite, Velveeta. :-) This hearty, comforting casserole is the perfect side dish for your Thanksgiving feast tomorrow (maybe minus the ham)!

As much as I tried to avoid it, I caught the dreaded cold going around. Sleep, DayQuil and NyQuil have been my best friends this week. I wanted to make something hearty and healthy, so I came up with this turkey chili loaded with vegetables. The chili is of course healthier sans sour cream, but I’m a sucker for sour cream, so I figured a dollop wouldn’t hurt. :)

I wanted to give my friend, Danielle, a personalized gift for her birthday; so, I told her I’d make a homemade dinner of her choice–wine included, of course. :) She chose these mini chicken pot pies and boy were they delicious, with a few tweaks to the original recipe. Though the individual ramekins held more than enough food, we both liked the idea of personal pot pies. One thing is for sure–this meal is hearty.
