feels like summer. [fresh citrus margarita]

Okay, I know it’s only March, but I was really craving a margarita the other day and these hit the spot and got me so excited for summer. This margarita is dangerously delicious and beyond refreshing with all of the fresh citrus – freshly squeezed orange juice, lime juice and lemon juice. There’s a lot of juicing involved with this recipe (especially if you’re making more than two cocktails), but it is SO worth it!

summer sips. [blackberry jalapeño margarita]

I don’t know what it is, but I’ve been on a cocktail kick lately (I’m typically more of a wine gal). It’s most likely because it’s been sweltering hot and there’s nothing a refreshing cocktail can’t fix. This margarita definitely hit the spot the other night and was the perfect combination of sweet and spicy. These would be a great addition to your Taco Tuesday!

cool down. [raspberry vodka spritzer with mint]

Kick your summer up a notch with this easy peasy, super refreshing cocktail. It’s the fresh muddled raspberries that do it for me. And raspberries are fruit, so this is healthy…right? It’s been miserably hot the past couple weeks, so I haven’t been using the oven and stove as much, which is why this spritzer became a thing. The cocktail certainly helped cool us down!

VeeV Spirits collaboration. [spicy grilled eggplant caprese stacks w. crispy parmesan lavash paired w. fruit cup sangria]

VeeV Spirits contacted me a couple months ago asking if I’d be interested in creating a dish to pair with one of their seasonal cocktails. I gladly accepted the offer, and chose to work with the VeeV Fruit Cup Sangria. The cocktail was sweet and delicious, and paired wonderfully with my slightly spicy grilled eggplant stacks. Both the cocktail and eggplant stacks are making an appearance at our Thanksgiving dinner tomorrow!

cheers. [coctel de camarones – shrimp cocktail]

I hope everyone had a wonderful Christmas or Hanukkah with family and friends. The past few days here have consisted of relaxing, cooking, eating, drinking, watching movies, etc.–exactly how I wanted to spend my time off work.

Yesterday, our friend Estela and her daughter, Amy, came over to teach my mom and I how to cook some of their authentic Mexican dishes. I’m featuring Estella’s shrimp cocktail today, and will post her chicken verde later this week. Unless you’re planning on bringing this as an appetizer to a party, I suggest cutting the recipe in half. You’ll notice in the photos below that it makes a lot.

The preparation is time intensive, specifically de-shelling and deveining the shrimp (it took four of us 45 minutes); however, the end product overshadowed the time spent preparing.
