Hi everyone! It’s been a minute (or a couple months) since I last posted. With a busy work schedule and back-to-back weekends of weddings, bridal showers, bachelorettes – you name it – I haven’t found much time to get in the kitchen! We finally had a weekend at home with absolutely no plans, so we decided to make these incredibly delicious cheeseburger tater tot cups. I found these gems on Pinterest and made a few tweaks to the recipe and boy, were they a hit. These tots are the perfect appetizer for football Saturday and/or Sunday!

Ingredients
  • Cheeseburger Tater Tots Recipe:
  • 48 tater tots, frozen
  • 1 lb. Ground Sirloin (or Ground Beef)
  • ½ yellow onion, finely diced
  • Salt and pepper, to taste
  • 3-4 tbsp. mayonnaise
  • 2 tbsp. yellow mustard
  • 2 tbsp. ketcup
  • 2 tbsp. pickle relish
  • Approx. ½ cup of shredded cheddar, Monterrey Jack & mozzarella cheese
  • Mini pickles, sliced, for garnish
  • Sriracha, for garnish
  • Sauce Recipe:
  • ½ cup mayonnaise
  • 4 tbsp. pickle relish
  • 2 tbsp. yellow mustard
  • 1 tsp. white wine vinegar
  • 1 tsp. paprika
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
Instructions
  1. Preheat oven to 425 degrees fahrenheit.
  2. Heat a large skillet over medium high heat, then add ground beef. Break beef up into small pieces while it cooks. Once beef is about halfway cooked, add the diced onion and cook until softened.
  3. Next, add mayonnaise, mustard, ketchup, and pickle relish to the ground beef and stir to combine. Season with salt and pepper, to taste.
  4. Grease a mini muffin pan and place three frozen tater tots in each cup. Bake for about 8 minutes.
  5. Remove the muffin pan from the oven and press the tater tots down into each cup to form a tater tot cup. Place the muffin pan back in the oven for 3-4 minutes. Remove from the oven.
  6. Fill the tater tot cups with the ground beef mixture and top with a sprinkle of shredded cheese.
  7. Place the tater tots back in the oven and cook for another 10-15 minutes.
  8. Remove the cheeseburger tots from the oven and let cool for 5 minutes before removing them from the muffin pan.
  9. While the cheeseburger tots cool, mix together all of the sauce ingredients.
  10. Drizzle the sauce over the cheeseburger tater tot cups and top with mini pickle slices and a dollop of sriracha, if desired.
