IMG_2724No joke, my roommate and I have eaten this salad four days in a row–it’s that good. It’s also one of the easiest and quickest recipes, aside from the time it takes to cook the quinoa, which is all of 10-15 minutes. The lemon-mustard vinaigrette compliments the salad wonderfully, and tames the bitterness of the kale. Considering how much salad we made, I’ll be eating this for another few days.

my kind of remedy. [spiced pumpkin bread w. walnuts]

Baking is the perfect outlet when I have a lot on my mind. It’s sometimes even more therapeutic than a heavily poured glass of wine, believe it or not!

I recently realized that I hadn’t posted a baked good since March. Yes, MARCH. Clearly, I had to remedy this situation, so I decided to bake this spiced pumpkin bread. I wish I could explain how unbelievably amazing my apartment smelled during the baking process. It was a torturous hour of waiting, but worth it in the end when my roommate and I got to indulge in a slice straight from the oven. The bread was even better the next day.

sweetness. [honey walnut shrimp]

I’ve had this honey walnut shrimp recipe filed away ever since Joanne from Fifteen Spatulas posted it a while back. So, I apologize for the non-seasonal post, but I felt it was time to finally make the dish. I’m so glad that I did. Seriously, go make it right now, it’s incredible! Sure, your kitchen might stink of oil for a few days (or maybe that’s just me because I don’t have a deep fryer/backyard), but it’s nothing a little Febreze and open windows can’t fix. :)

My thoughts and prayers go out to those in Colorado. x

gone bananas. [banana bread w. toasted walnuts]

Ever since Kristy over at Eat, Play, Love started her ‘Quest for the Best Banana Bread,’ I’ve been on the hunt to find some contenders . Though I wouldn’t know if this is the best bread out there, as I haven’t tested multiple recipes like Kristy, this one has to rank pretty high up there.

The prominent flavors of banana and cinnamon pair wonderfully with the toasted walnuts. Even the texture of the bread is spot on, with an incredibly moist interior and slightly crunchy exterior. Perfect for breakfast with a cup of coffee, a mid-day snack or late night treat.
