I’ve never been much of a sweets person when it comes to breakfast food – I prefer something on the savory side (i.e. loaded breakfast burrito). My husband, on the other hand, has a huge sweet tooth and has been craving pancakes for weeks. I finally caved yesterday morning and surprised him with these fluffy and delicious homemade pancakes. They were super easy to make and turned out exactly as we’d hoped. I even enjoyed them! ;)

Ingredients
- 1½ cups 2% milk
- ¼ cup white vinegar
- 2 cups all-purpose flour
- ¼ cup white sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 2 eggs
- 4 tbsp. unsalted butter, melted and cooled
- ¼ tsp. vanilla extract
- Cooking spray
- Unsalted butter and maple syrup, for topping
Instructions
- In a large bowl, combine milk with vinegar and set aside 15-20 minutes to "sour." (This is homemade buttermilk).
- In a separate medium bowl, combine flour, sugar, baking powder, baking soda and salt. Gently whisk egg and cooled melted butter into "soured" milk. Add vanilla extract, then pour the flour mixture into the wet ingredients and gently whisk / fold ingredients until lumps are gone. Do not over whisk!
- Heat a large skillet or flat grill pan over medium heat, then coat with cooking spray.
- Pour ¼ cupfuls of batter onto the skillet or flat grill pan, and cook until bubbles appear on the surface. Flip with a spatula and cook until browned on the other side.
- Remove from heat then serve pancakes topped with butter and maple syrup.
