Here’s another simple, delicious and fool-proof summer side dish–the ever famous caprese salad. The key ingredient to this particular caprese? Heirloom tomatoes, of course.
If you’ve ever tasted a slice of a juicy, ripe, melt-in-your-mouth heirloom, you can understand the difference they make in this salad. Not only do heirloom tomatoes taste better, but they also make for a more colorful and visually appealing dish.

2 organic red heirloom tomatoes
2 organic orange heirloom tomatoes
1 package high quality mozzarella cheese
1/2 cup fresh basil leaves
Organic olive oil
Balsamic vinegar, or reduction
Salt and pepper, to taste
Cut tomatoes and mozzarella into thick slices. Arrange on platter as desired. Scatter basil leaves over tomatoes and cheese. Season with salt and pepper, then drizzle with organic olive oil and balsamic. Serve cold.
