These bars are the best of both worlds – brownies and chocolate chip cookies AKA brookies! They’re stacked with Ghirardelli triple fudge brownies, homemade chocolate chip cookies and salty pretzels. If you know me well, you know I’m not a big fan of chocolate, so to be honest, I didn’t even eat one of these. I more so made them for my husband and family because after all, there are some people in this world who enjoy chocolate. :-) From their reactions, I can confirm these brookies were an absolute hit and devoured very quickly.

Ingredients
- 1 box Ghirardelli Triple Fudge Premium Brownie Mix
- 1 cup + 2 Tbsp. all-purpose flour
- ½ tsp. salt
- ½ tsp. baking soda
- ¼ cup + 2 Tbsp. firmly packed light brown sugar
- ¼ cup + 2 Tbsp. granulated sugar
- ½ cup (1 stick) unsalted butter, cold, cut into 1-inch slices
- ½ tsp. vanilla extract
- 1 egg
- ½ package (6 oz.) semi-sweet chocolate chips
- Pretzel twists, broken up into small pieces, for topping
Instructions
- Preheat oven to 350 degrees. Grease an 8"x8" glass baking dish and set aside.
- For the brownies:
- Prepare brownie mix according to package instructions, then pour into the greased baking dish.
- For the chocolate chip cookies:
- Combine the flour, salt and baking soda in a medium bowl, then set aside.
- In a separate medium bowl, combine the brown sugar, granulated sugar, cold butter slices and vanilla extract, whisking together with a hand mixture until creamy.
- Add the egg and mix on low speed until just incorporated, 10-15 seconds.
- Add the dry ingredients to the bowl and mix on medium-low speed until just incorporated.
- Gently fold in the semi-sweet chocolate chips with a wooden spoon or spatula.
- For assembly and baking:
- Using a tablespoon-sized cookie scoop, drop the dough in small scoops on top of the brownie mixture, until the surface is covered with dollops of cookie dough. Using a spatula, very gently spread the dough so the majority of the brownie mixture is covered (it's fine if it's not completely spread out).
- Next, add desired about of crumbled pretzels on top of the cookie dough, gently pressing them down with the palm of your hand.
- Bake uncovered for 25-30 minutes (until the cookie dough is golden brown), then lay a piece of foil on top of the pan (to prevent the cookies from browning too much), and bake an additional 20 minutes, until the center is just slightly jiggly.
- Allow the bars to cool completely before cutting and removing from pan.
