product review – Appetites. [tamarind glazed beef w. sesame broccoli & snow peas]

Appetites provides tons of delicious recipes on the app. Once you select a recipe and enter your billing information, you select a delivery time and all the ingredients arrive at your door that same day! Pretty convenient, huh? What’s even better is that once you’re ready to cook, the app has step-by-step video instructions for the recipe–it couldn’t get much easier. This tamarind beef I chose to make was full of flavor and delicious paired with the nutty broccoli and snow peas!

Ingredients
- ¼ cup light brown sugar
- 2 tbsp. soy sauce
- 1 tbsp. fresh ginger, peeled then grated
- 1½ tsp. chili paste
- 1 lb. flat iron steak or skirt steak
- 4-5 green onions, ends removed, then sliced
- 12 oz. (1½ cups) snow peas, cut at a diagonal
- 1 oz. (2 tbsp.) tamarind paste
- 3 cloves garlic, minced
- 2 lbs. fresh broccoli, stems removed, larger pieces of broccoli cut in half
- 2 tbsp. apple cider vinegar mixed with 2 tbsp. water
- 5 tbsp. canola oil
- Salt, to taste
- 2 tbsp. sesame seeds, plus more for garnish
- 1 tsp. sesame oil
Instructions
- Season both sides of the steak with salt.
- Place a small saucepan over medium-high heat, then add 2 tbsp. canola oil. Once the oil is hot, add the garlic and ginger; cook about 1 minute, until fragrant. Add the chili paste, stir and cook about 1 minute. Next, add the brown sugar, tamarind glaze, soy sauce, and vinegar and water mixture. Bring sauce to a boil and cook 1-2 minutes, until sauce thickens. Once thick, turn the heat off and transfer saucepan to the back burner and place over low heat.
- Place a large skillet over high heat, then add 2 tbsp. canola oil. When the oil is hot, add the broccoli and snow peas; season with salt and stir to combine. Add the sesame oil and 2 tbsp. sesame seeds. Shake and stir to combine and evenly distribute the ingredients. Cover the pot and let cook for about 5 minutes; after the 5 minutes, remove the pan from the heat, leaving the lid on.
- Next, place another large skillet over high heat. Add the remaining 1 tbsp. canola oil. Once the oil is hot, add the steak to the pan. Allow the steak to cook 2-3 minutes on each side until brown and caramelized, then flip steak over and brown other side.
- Spoon the glaze onto the top side of the steak. Flip steak over, so the tamarind sauce side is face down in the skillet. Glaze the other side of the steak with more tamarind sauce. Flip the steak over one more time, then turn off the heat for the steak and the remaining tamarind sauce.
- Transfer steak to a cutting board and allow to rest 4-5 minutes. Cut against the grain of the steak and at an angle for best results.
- Place tamarind steak on plate with sesame broccoli and snow peas. Garnish with sesame seeds and green onion.
