berry delicious. [mini strawberry cupcakes]
It’s almost impossible to limit yourself to just one of these delectable mini strawberry cupcakes. I baked them for my family and cousins from Ohio while they were visiting and I think they demolished the batch in 3 days. I used my grandma’s recipe for her strawberry cake, but figured the recipe would be just as delicious in cupcake form—and that was definitely the case!
Recipe:
1 package strawberry cake mix (I prefer Betty Crocker)
1 three oz. package strawberry gelatin
3/4 cup cooking oil
4 eggs
1/2 cup water
1/2 cup mashed strawberries
Directions:
Combine cake mix, gelatin, water and oil. Put in big bowl of electric mixer. Beat until smooth. (Add eggs one at a time). Beat after each addition. Add berries and beat until well mixed. Divide batter into mini cupcake tins. Bake at 350 degrees.
Frosting recipe (from Betty Crocker cookbook):
3 cups powdered sugar
1/3 cup margarine or butter, softened
1 1/2 tsp. vanilla
About 2 tbsp. milk
