IMG_3943This burrito is the epitome of a fresh, summer meal (unlike my last post). The sweetness of the chicken and corn compliments the slightly spicy tomatillo sauce. Though the recipe was somewhat laborious, it was completely worth it. All of the components were delicious on their own, and even better when combined.

late to the game. [jalapeño poppers w. sausage & parmesan]

I’m a little late, but I hope everyone’s Super Bowl Sunday was a blast (aside from the 49ers losing). My roommate and I had a bunch of friends over to  watch the game, eat mass amounts of food and drink an exorbitant amount of beer. We had a variety of appetizers ranging from these stuffed jalapenos to a crock-pot sausage and cheese dip to mini weenies in Jack Daniels sauce to homemade chicken tenders to a kale cheese dip. Since a couple of my friends are vegetarians, I made half of the jalapenos with sausage, and half with just the cheese mixture–both were equally delicious!

stuffed. [jalapeño chicken wraps]

I haven’t had much time to cook this week; however, I did get a chance to whip up these simple jalapeno chicken wraps last Sunday. A group of friends and I decided to picnic before the Passion Pit and Hot Chip concert at the Hollywood Bowl, so everyone was in charge of bringing food or wine. We had an absolute blast and stuffed ourselves with mass amounts of food, from these wraps to my orzo salad to fresh fruit to The Alcove‘s lemon bars and peanut butter cookies. Happy weekend, everyone!

crunch time. [ground turkey tacos picadillo w. homemade taco shells]

I’m always looking for new ground turkey recipes. The meat is much lighter than beef, but doesn’t lack in flavor. I made turkey burgers (here and here) and turkey chili (here), and wanted to cook something else with the meat.

I decided on ground turkey tacos picadillo; light with a kick of spice from the chili powder and cumin. The salty and crunchy homemade corn tortilla shells worked wonderfully with the succulent meat. Taking the extra time to fry the tortillas was well worth it. I’ll definitely be making these again for a quick, delicious meal.

kick it up a notch. [chicken tortilla soup]

Mexican food is by far my favorite cuisine. Tacos, burritos, quesadillas, guacamole, tortilla chips—you name it, I love it and I’ll eat it. My mom’s tortilla soup recipe is right up there in my list of favorite dishes. The soup has just the right amount of kick from the jalapeno, especially for me since I have an abnormally low spice tolerance.

This recipe is broth based, rather than cream, which makes it much healthier, while still hearty and delicious. The soup is so full of flavor that garnishes are not necessary, but adding a dollop of sour cream and sprinkle of shredded cheese can never hurt.

Leftovers will be aplenty after making this recipe. The soup heats up well for lunch the next day or dinner the rest of the week.
