meatballs w. marinara sauce
 
 
Ingredients
  • Meatball recipe:
  • ¾ lb. ground beef
  • ¾ lb. ground sirloin
  • 1 small sweet onion, grated
  • ¼ cup Progresso plain bread crumbs, plus more as needed
  • 1 egg
  • ½ tsp. salt
  • ½ tsp. ground black pepper
  • ¼ tsp. garlic powder
  • ¼ cup water
  • Marinara sauce recipe:
  • 2 cans (56 oz.) Cotadina crushed tomatoes
  • 2 tbsp. oregano, plus more or less to taste
  • 2 tbsp. parsley, plus more or less to taste
  • Salt and pepper, to taste
  • Olive oil
  • 3 cloves garlic, minced
  • ¼ cup sweet onion, finely diced
Instructions
  1. Preheat oven to 350 degrees.
  2. For the meatballs: In a large bowl, mix both meats with the remaining ingredients. Lightly spray two cookie sheets with cooking spray.
  3. Roll meat into 1-inch balls and place on cookie sheets. Bake each tray for 15 minutes.
  4. For the marinara sauce: Pour both cans of tomatoes in a large pot. Add seasonings and bring sauce to a simmer.
  5. Warm a small skillet over medium heat, then add olive oil. Add diced onion and garlic to pan and saute until aromatic and translucent. Pour onions and garlic into pot with sauce.
  6. Cook about 20 minutes to blend flavors. Pour sauce into crock-pot on low heat, then add meatballs. Cook 1 to 1½ hours.
  7. Serve meatballs alone (as an appetizer), or atop whole wheat spaghetti.
