*We often double the sauce because it's so delicious.
Meatloaf recipe:
⅔ cup bread crumbs, dry
¾ cup milk
½ cup ketchup
1½ lbs. ground beef
2 eggs, beaten
¼ cup onion, finely grated
1 tsp. salt
⅛ tsp. pepper
½ tsp. sage
Instructions
Preheat oven to 350 degrees.
For the picante sauce:
Whisk all ingredients together in a small bowl. Set aside.
For the meatloaf:
In a large bowl, soak bread crumbs in milk for 10-15 minutes. To the bowl, add ground beef, grated onion, and seasonings. Mix together well with your hands.
Form meat into two individual loaves and place into two greased loaf pans. Cut a few slits into the tops of each meatloaf, then pour sauce over the tops and distribute evenly with a spatula.
Bake meatloaf 45 minutes to 1 hour or until done. Serve hot.
