½ cup unsalted butter, cold, cut into ½-inch cubes
2 large egg whites
2 tsp. vanilla extract
1¼ cups chunky peanut butter
1¼ cups all-purpose flour
½ tsp. baking soda
½ tsp. salt
1 bag (10.2 oz.) Butterfinger fun size candy bars, cut into small chunks
Instructions
Preheat oven to 350 degrees.
In a large bowl, beat together the white sugar, dark brown sugar and cold butter cubes until fluffy and creamy, about 3-5 minutes. Add egg whites and gently mix on low speed until just incorporated.
Add chunky peanut butter and mix thoroughly.
Next, add flour, baking soda and salt and whisk together on medium-low speed until just incorporated. Stir in Butterfinger candy bar chunks by hand until mixed in the dough.
Drop by the tablespoon onto the cookie sheet, baking 12 cookies at a time for 10-11 minutes. Bake remaining cookies.
