Ingredients
  • 1 cup all-purpose flour
  • 2 tsp. paprika, divided
  • 1 tsp. kosher salt, divided
  • ½ tsp. black pepper, divided
  • 2 large eggs
  • 2 Tbsp. water
  • 1½ cup panko breadcrumbs
  • 1 large yellow onion, cut into ½-inch thick rounds and separated into rings
  • Olive oil cooking spray
  • Ketchup or ranch, for dipping
Instructions
  1. In a shallow bowl, mix together the flour, 1½ teaspoons paprika, ½ teaspoon of the salt and ¼ teaspoon of the black pepper.
  2. In another shallow bowl, lightly beat the eggs and water.
  3. Mix together the panko breadcrumbs, remaining ½ teaspoon paprika, remaining ½ teaspoon salt and remaining ¼ teaspoon black pepper in a third shallow dish.
  4. Dredge onion rings in flour mixture, shaking off excess. Next, dip in the egg mixture, allowing any excess to drip off. Finally dredge the onion rings in the panko mixture, firmly pressing the sides so the breadcrumbs stick.
  5. Spray the basket of the air fryer generously with olive oil spray. Place the onion rings in a single layer in the air fryer basket, then spray the tops of the onion rings with additional olive oil spray. Heat the air fryer to 375°F and cook the onion rings 9-10 minutes or until golden brown and crispy on both sides, flipping onion rings at the halfway mark. Cover to keep warm while air frying the remaining onion rings. (Depending on the size of your air fryer, you might need to cook the onion rings in 4-6 batches, since they need to fry in a single layer).
  6. Serve onion rings hot with a side of ketchup, ranch dressing, or desired sauce.
