I love summertime, primarily because it’s grilling season. I’ve always been a fan of grilled food with that delicious char flavor. This spicy corn salad has the grilled taste and bursts with flavor, from the spice of the hot sauce to the sweetness of the sugar and honey. The dish pairs wonderfully with grilled chicken, and even better with this honey-lime chicken burrito!

not your typical taco. [spiced lentil tacos w. adobo chile sour cream]

Lately, I’ve tried to make recipes using ingredients already on hand. I’ve had a huge bag of lentils sitting in my pantry for a few weeks, so I figured it was time to put them to use. I decided to make this simple and delicious recipe for spiced lentil tacos with an adobo chile sour cream.

Upon each bite, the palette is hit with the mild taste of the cumin soaked lentils, followed by the kick of the adobo chile sour cream. These tacos are perfect for weekday nights when cooking a gourmet meal isn’t in the cards.

Natalie, you can easily make the tacos vegetarian by using vegetable broth instead of chicken broth–I just didn’t have any in the pantry. :)

game day guac. [guacamole w. cotija cheese]

With football season in full swing, I felt it appropriate to feature my version of a common game day snack–guacamole. Though everyone has his/her own take on the dip, I stand by this simple, yet flavorful recipe. What really amplifies this version is the addition of Cotija cheese crumbled on top. The saltiness of the cheese wonderfully compliments the other ingredients.

Per usual on Saturdays, I spent the day watching college football. Though we’ve had a rough year, I still support my Ohio State Buckeyes just as much as I would any other year. Our win against formerly ranked #16 team Illinois gave us some reason to celebrate in all of this mess.

Like Christina over at Sweet Pea’s Kitchen, who actually went to the OSU game, I grew up in Columbus, OH. Both of my parents attended The Ohio State University, so, I’ve bled scarlet and grey ever since I could walk and talk. Believe it or not, my family has a Buckeye room at our house in South Carolina (the photo doesn’t even do it justice).
