Hope everyone had a great weekend, and is surviving/survived Monday! I have yet another busy week ahead of me, as I’m heading to New York in a couple of days for work. Though it’ll be a quick trip and full of work events, I’ll have some time to visit friends who live in the city.

These lettuce wraps are fresh and delicious, and the perfect weeknight meal. The spicy drizzling sauce has just the right amount of kick and boosts the flavor of the ground turkey. Enjoy!
Recipe:

1.5 lbs. ground turkey

2 tsp. olive oil

2-3 cloves garlic, minced

1 (8 oz.) can water chestnuts, drained and chopped

3 scallions, chopped

1 red bell pepper, diced

1/4 cup soy sauce, plus more to taste

1 tbsp. brown sugar

1 tbsp. rice wine vinegar, plus more to taste

Directions:

Brown the turkey in the olive oil in a large skillet over medium-high heat until cooked. Add the scallions, garlic and water chestnuts and cook a few minutes. In a small bowl, mix the soy sauce, brown sugar and vinegar. Pour over the turkey mixture and cook 1-2 minutes. Remove from heat.

Sauce recipe:

3 tbsp. low-sodium soy sauce

2 tbsp. rice wine vinegar

1 tbsp. honey

1 tbsp. Dijon mustard or spicy mustard

1 tbsp. Sriracha sauce, plus more to taste

1/2 tsp. sesame oil

8-12 butter lettuce leaves, cleaned and dried

Shredded carrots, for serving

Chopped fresh cilantro, for serving

Directions:

In a small bowl, whisk together the soy sauce, vinegar, honey, mustard, Sriracha, sesame oil and 1/4 cup water.

Place turkey mixture in each lettuce cup, then top with sauce and vegetables. Serve.
