flavor explosion. [honey-lime chicken burrito w. tomatillo sauce, Cuban-style black beans & grilled corn in lime dressing]

IMG_3943This burrito is the epitome of a fresh, summer meal (unlike my last post). The sweetness of the chicken and corn compliments the slightly spicy tomatillo sauce. Though the recipe was somewhat laborious, it was completely worth it. All of the components were delicious on their own, and even better when combined.

Tomatillo sauce recipe:

1 1/2 cups tomatillos, husked, quartered

1 cup Anaheim peppers (2 peppers)), seeded and chopped

1/2 cup red onion, chopped

2 jalapeno, seeded and chopped

2-3 cloves garlic

1/2 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Directions:

Place all ingredients in blender and pulse until combined. Season with salt and pepper, to taste.

Marinade recipe:

1/2 cup fresh lime juice

1/3 cup honey

3-4 cloves garlic, minced

1/2 tsp. cayenne

Salt and pepper

4 boneless, skinless chicken breasts

Directions:

Whisk lime juice, honey, garlic, cayenne, salt and pepper in a small bowl. Pour marinade over chicken in a resealable plastic bag and marinate in refrigerator for 30-45 minutes; preheat grill to medium.

Remove chicken from marinade and place on grill. Cook each side about six minutes, or until cooked through. Brush chicken with marinade a few times while cooking. Remove chicken from grill then slice into thin strips.

Grilled fresh corn recipe:

4 ears fresh sweet corn, shucked

2 tsp. vegetable oil

1 tbsp. fresh lime juice

1 tbsp. hot sauce

1/4 cup chopped fresh cilantro

1 tsp. jalapeno, seeded and minced

1/2 tsp sugar

Salt and pepper, to taste

Cotija cheese, for topping

Directions:

Preheat grill to medium.

Coat corn with oil and grill until lightly charred, turning frequently, 10-15 minutes.

Whisk lime juice, hot sauce, cilantro, jalapeno, sugar, salt and pepper together in a small bowl while corn grills. Allow corn to cool slightly, then slice kernels off cob and toss in dressing to coat. Garnish with Cotija cheese.

Honey-lime chicken (recipe above)

Cuban style black beans

Grilled corn (recipe above)

Flour tortillas, grilled

Cotija cheese, for topping

Directions:

Place grilled tortilla on plate, then top with chicken, tomatillo sauce, beans and corn. Sprinkle Cotija cheese on top, then roll up tortilla and serve.
