I was recently asked to guest blog for one of my favorite food bloggers, Raymund from Ang Sarap. I was truly honored when I received his e-mail. Head over to Ang Sarap to check out my guest post.

Since it’s been an insanely busy and hectic work week, I’m anticipating a relaxing weekend ahead. Unfortunately, that meant I had to put cooking and blogging on the back burner. I did, however, find time to whip up this simple and gorgeous blackberry fool–healthy for a dessert, too. ;) Are you catching onto this theme over the past few weeks? Well, we’ll see how long that lasts. ;)


blackberry fool w. cayenne
 
Ingredients
  • 1½ cups fresh blackberries
  • ¼ tsp. cayenne, plus more to taste
  • 3 tbsp. light brown sugar
  • 1 tsp. fresh lime juice
  • 1 cup heavy whipping cream
  • 1½ tbsp. confectioners' sugar
  • ½ tsp. vanilla extract
Instructions
  1. Set a medium mesh sieve over a medium bowl. Use the back of a wooden spoon to push 1 cup of the blackberries and cayenne powder through the sieve, smearing the berries back and forth across the mesh until only seeds and pulp remain. Scrape any puree from the bottom of the sieve. Whisk the brown sugar and lime juice into the puree.
  2. In the bowl of a stand mixer, combine the cream, confectioner's sugar and vanilla and beat and high-speed until soft peaks form, about 2 minutes.
  3. Pour the blackberry mixture into glass dessert bowls or cups and top with the remaining blackberries.
