Hope everyone had a relaxing President’s Day! I had the holiday off, so I spent the day at home doing absolutely nothing–I wouldn’t have wanted it any other way. After hosting the lamb supper club last week, a cooking-free weekend sounded quite appealing. But, since this crock-pot recipe is so simple, I didn’t mind whipping it up.
Recipe:
Olive oil
4 cloves garlic, minced
3/4 large red onion, diced
2 jalapenos, seeded and diced
Cuban-style black bean and corn salsa
6 boneless, skinless chicken breasts
1 can (28 oz.) San Marzano diced tomatoes
1 package Taco Bell seasoning
Directions:
In a small skillet, heat olive oil over medium heat. Saute garlic, onion and jalapenos until aromatic and translucent, about 5-8 minutes.
Place 6 chicken breasts in bottom of crock-pot. Pour garlic, onion and jalapeno mixture on top, then add black bean mixture, tomatoes and taco seasoning.
Cook on low for about 6 hours. Once done, remove chicken breasts and shred, then place back in crock-pot. Serve hot alongside rice, if desired.

I know, right? I can’t get enough of chicken!! Now you need to get your slow-cooker. and speak of the devil, I ate it in a flour tortilla for lunch today!

This figures! I gave my slow cooker away to a charity shop 2 weeks ago. Now that I’m without, here come the recipes! When I get the new one, this recipe will be one of the first to christen it.

I’ll never get rid of my slow cooker!! It’s exactly for days like you had that I love to be able to not cook but still have a comforting homecooked meal!! Sounds delicious!!

Wait a second. I’m totally digging the ingredients, then I come to Taco Bell seasoning?? I never thought I’d see the day Caroline. What a barbaric corporate ingredient to use that has absolutely no place….oh wait a second I eat TB once in a while. Never mind. :-) Seriously though, looks like some good stuff.
I know, I know. Really threw you for a loop there, didn’t I? I told you I was feeling lazy/tired…so dumping a seasoning mix in just seemed like the right thing to do. I’m honestly not a fan of TB and never eat there, but the seasoning mix ain’t all bad!

What a nice comforting meal, Caroline. Happy Presidents’ day to you too…we just had family day on Monday. I think I might make up my own mix of seasoning, being concerned with the chemicals TB might put into theirs.
Right, I was just feeling extremely lazy, so that’s what happened! Mixing your own seasoning would of course still be delicious. :)
