The other night, I realized that my pantry was overflowing with unopened cans and bags of beans, boxes of pasta, crackers, etc. It was clearly a sign that I needed to make use of some of these ingredients. Pasta is always a quick-fix meal, so I created this simple, yet flavorful, pasta dish with ingredients I’d seemingly forgotten about.

Though this recipe isn’t anything groundbreaking, it was a delicious and hearty meal after a long day at work. Granted, I probably ate a much larger bowl than those photographed above, but I’ll let you think I have portion control. :)

Recipe:

2 tbsp. unsalted butter

1/2 cup heavy whipping cream, plus more, as needed

5 Roma tomatoes, diced

2 cloves garlic, crushed

1/2 sweet onion, finely diced

Salt and pepper, to taste

6 oz. (1/2 box) Rotini pasta

3-4 Fresh & Easy chicken and apple sausage, sliced diagonally

Directions:

Warm a medium skillet over medium heat then add butter. Once butter is melted, add cream, garlic, onion and tomatoes. Let mixture simmer until tomatoes are tender and flavors meld, about 20-25 minutes, stirring occasionally.

Bring a large pot of water to a boil then add pasta and a dash of salt. Cook pasta until slightly aldente, about 10 minutes. Drain, then return pasta to the pot.

In a small skillet, brown sausage slices, about 5 minutes, then add to tomato cream sauce. Simmer mixture for another 5 minutes, then add sauce to the pot of dry pasta and stir. Serve hot.

  1. I love adding cream to tomato sauce. I’ll add it to my Italian sauce for a change every now and then, I like the creamy feel it gives to a dish. Pasta is always welcome home comfort food!!

  2. Whipping cream? That’s how I know you are still young Caroline…that you can get away with that…hips and waist and all. Looks so yummy. I’ll trade you a bowl of that for a slice of my cake? We’ll meet somewhere in between our houses. Should be a hop, skip and a jump away.

  3. This is my kind of pasta dish, Caroline. Take a look in the fridge, the pantry, maybe even the freezer. Depending on what you find and the cooking time for it, you could be eating a comforting bowl of pasta within a half hour. Now that’s fast food!

  5. Hooray for cleaning out cupboards. I need to do some serious cleaning out after Christmas… I have cans and packs coming out of my ears (but at least I could live for weeks on stocks in case of a zombie invasion!). Will definitely be making plenty of yummy stuff like this :)

  8. mmmm I love chicken sausage. It’s just such a great treat in pasta dishes or as a side with sauteed veggies. Great idea to put them with the creamy tomato sauce :)

  9. Absolute comfort food.. and I agree.. my idea of portion control is to eat one of those… and then refill it and pretend I didn’t:) This is such a heart warming combination of flavors!
